Porridge Recipe: Get AlexiaOfLife’s breakfast of champions

The beautiful thing about social media? It lets you connect to people all over the world. While working on the official @gettwofit Instagram account, I came across the lovely @AlexiaOfLife, a classically-trained Le Cordon Bleu chef who’d posted a brilliant photo of her breakfast of champions: a warming winter porridge for those of you who are enjoying the cool weather in the southern hemisphere. Because I’m a sucker for beautiful and healthy meals, I reached out to beg her for her porridge recipe, and she cheerfully obliged! Best of all? It’s vegan and gluten-free!

I’m so thrilled you like my porridge! Here’s a recipe for this delicious winter warmer so you can taste it for yourselves:

How to Prepare

Please note that all ingredients I use are certified organic. I also only use filtered water!

  • 1/4 cup oats
  • 1/4 cup quinoa flakes
  • Pinch of salt
  • 1 cup water
  • 1 tbs chia seeds
  • 1 tbs flax seeds
  • 1 tbs Linseed-Sunflower-Almond (LSA) mix
  • 1 tbs coconut oil

Put all ingredients into a small saucepan and bring to a simmer over medium heat for approximately 4 minutes, until well cooked.
Cut fresh seasonal fruit decoratively and put aside to place on top of porridge for serving. At the moment I’m loving apples, strawberries, kiwi, and bananas.

In your serving bowl, arrange the following ingredients:

  • 1 tbs buckinis
  • 1 tbs sultanas
  • 1 tbs toasted coconut flakes
  • 1 tbs goji powder
  • 1 tbs supergreens powder
  • 1 tbs cacao nibs
  • 1/2 cup coconut milk

Now, pour the porridge mixture over this. Finally, garnish decoratively with fruit.

Because I love extra crunch, nutrients, and yum, I’ve added crushed dry roasted almonds on top!
